Five years after ISCAHM was established, Norbert Gandler and Hans Schallenberg ventured in the restaurant business and put up Aubergine Restaurant and Patisserie, a fine-dining restaurant serving modern Continental cuisine with an Asian blend, as a training ground for the students of ISCAHM.

2003 – Present

Norbert Gandler left the Mandarin in 2003 to begin a new phase in career: to mentor a professional culinary academy. Norbert, together with his friend and colleague, Hansjorg Schallenberg, put up a culinary and hotel management school in the Philippines to replicate the international standards and the traditional way by which they learned cooking in Europe - The International School for Culinary Arts and Hotel Management (ISCAHM).
